Summer Carrot Salad ~ I was so surprised at how crispy and cold this was. I kept going for another bite over and over again.
Ingredients

10 oz shredded carrots
1/2 cup raisins
1/2 cup fresh pineapple, diced
1/2 cup apple, diced
1/4 cup grapes, diced
1/4 cup mayonnaise
1/4 cup whole plain yogurt
1 tsp sugar
1/4 tsp salt

Instructions

  1. Combine carrots, raisins, pineapple, apple, grapes in a large bowl
  2. Mix mayo, yogurt, sugar and salt together
  3. Pour over carrots
  4. Cover and refrigerate
