Scale of 1 -10: 9! Blackened chicken with cilantro lime quinoa and avocado cream sauce. Oh my! This has become my FAVORITE meal! We had it for dinner tonight and the only change I made was I grilled it on a grill pan rather than a regular pan and I added garlic, salt and olive oil to the avocado cream sauce to give it some extra flavor. Ive never had quinoa but this made me a fan. Delicious!
