Are surely going to keep you inside from those hot temps outside. I love s’mores but being outside by a fire pit in the middle of summer, just isn’t for me. To be honest, we don’t even have our fire pit out during the summer. The temps have been hitting the high 90s and every evening there has been a thunderstorm, so even if we wanted to enjoy the fire pit we wouldn’t really be able to. Yesterday afternoon, my brother was over playing with Bennett in the pool. After they got out they were asking for something sweet–actually, Bennett was requesting cupcakes. Since I’ve been slacking on grocery shopping this week—there wasn’t much to offer, until my brother found the brownie mix. I grabbed some eggs from my neighbors (my in-laws) and decided to make these delicious brownie cups. I made the brownie recipe as it was written, but I always substitute coconut oil for vegetable oil. It seriously gives it an amazing taste, ya’ll I don’t do it for any health factor. Maybe I should? I really don’t know how much “health” that would put in these brownies, but hey if it makes you feel better. You want the marshmallow to melt into the cupcake. Mine were almost finished cooking, so they kinda fluffed up over the top. So, if you want them this way let the brownie almost cook, and then press the marshmallow into the brownie. These were such a quick and easy snack to whip up and would be a great addition to any summer party or family get together–or just because. S’mores Brownie Cups 1 Box of Brownie Mix 36 Mini Marshmallows 1 Cup Milk Chocolate Chips 1/4 cup of Whipping Cream 1/4 cup of Graham Cracker Crumbs 1. Preheat oven to 325 degrees, and line a muffin tin with liners. 2. Mix up brownies as directed, using coconut oil instead of vegetable oil. 3. Bake brownies for 15 minutes (they will continue cooking later) 4. Press 2 mini marshmallows into the middle, being careful as the batter is really hot. 5. Continue baking for 5 minutes or until cooked through. 6. Place chocolate chips in a microwave safe dish with the whipping cream, and microwave for 30 minutes until completely melted. 7. Stir the frosting and scoop a little out on to the tops of each brownie cup. 8. Sprinkle graham cracker crust and place a marshmallow on top.
